Ingredients:
- 6 Cups of Water
- 1 Cup Coconut Cream
- 1/2 Cup Brown Sugar
- 1 Cup Coconut milk
- 1 1/2 Cups Frozen Blueberries
- 1/2 Cup Chia Seeds
- 1/4 Cup Freshly Ground Flax Seeds (Flax meal)
- 1/2 Cup Maple Syrup
- 5 Cups Rolled Oats
- 1 Teaspoon Pink Himalayan Salt (Celtic, or other healthy salt)
- 1 Teaspoon Vanilla Extract
- 1 Tablespoon Avocado oil or Vegan Butter
Directions:
- Add water, brown sugar, frozen blueberries, chia seeds, flax meal, salt, and vanilla extract to a large pot and bring it to a simmer
- Pour in the oats and continue stirring occasionally until the oatmeal has thickened and is almost cooked thoroughly
- Mix in the coconut cream, coconut milk, maple syrup and avocado oil or vegan butter and continue stirring for a few more minutes
- Once combined and sweetened to taste, pour into bowls, and enjoy your creamy blueberry delight
