Ingredients:

  • 6 Cups of Water
  • 1 Cup Coconut Cream
  • 1/2 Cup Brown Sugar
  • 1 Cup Coconut milk
  • 1 1/2 Cups Frozen Blueberries
  • 1/2 Cup Chia Seeds
  • 1/4 Cup Freshly Ground Flax Seeds (Flax meal)
  • 1/2 Cup Maple Syrup
  • 5 Cups Rolled Oats
  • 1 Teaspoon Pink Himalayan Salt (Celtic, or other healthy salt)
  • 1 Teaspoon Vanilla Extract
  • 1 Tablespoon Avocado oil or Vegan Butter

Directions:

  1. Add water, brown sugar, frozen blueberries, chia seeds, flax meal, salt, and vanilla extract to a large pot and bring it to a simmer
  2. Pour in the oats and continue stirring occasionally until the oatmeal has thickened and is almost cooked thoroughly
  3. Mix in the coconut cream, coconut milk, maple syrup and avocado oil or vegan butter and continue stirring for a few more minutes
  4. Once combined and sweetened to taste, pour into bowls, and enjoy your creamy blueberry delight
