Here is an idea on how to turn stir-fry vegetables into an interesting soup. Please remember that these recipes make 8-10 servings for larger families or those desiring to minister to others by sharing El’s bounty. Feel free to reduce in half if making for an individual or small family.
Ingredients
- 8 Cups Vegetable Broth
- 10 Cups Water
- 1 Large Bok Choy, chopped and washed
- 1 Large Leek, chopped and washed
- 16 oz. Frozen Broccoli
- 1 Head Garlic, chopped or minced
- 2 Cans Bamboo Shoots, drained and rinsed
- 2 Cans Water Chestnuts, drained and rinsed
- 2 Cans Baby Corn, drained and rinsed
- 2 Cans Mushrooms or 1 lb. Fresh Mushrooms (optional)
- 16 oz. Organic Frozen Edamame
- 1/2 lb. Organic Ramen or other noodles, broken in smaller pieces
- 1/4 Cup Organic Soy or Tamari Sauce
- 1/4 Cup Liquid Aminos
- Seasonings to Taste:
- Fresh Ginger (1 in. cube, minced or grated)
- Onion Powder
- Garlic Salt
- Cayenne Pepper or Siracha Sauce
Directions
- Bring broth and water to a simmer in a large stockpot over medium-high heat
- Add all vegetables, bring to a boil, and simmer for 10 minutes
- Add seasonings, stir, and continue to simmer another 10 minutes
- Add noodles, stir, and continue to simmer for 10 minutes or until vegetables are desired tenderness
