Ingredients

Salad:

  • 16 Oz Romaine
  • 1-2 Green Onion Stalks (Diced)
  • 1/2 Cup Vegan Shredded Parmesan Cheese
  • Prepared Vegan Chicken Strips or Diced Vegan Patties/Nuggets
  • Can add any other diced vegetable, fresh nuts, or seeds as desired
  • Optional: Toppings for individual plates could include Croutons, Tortilla Strips, extra Shredded Parmesan Cheese, Olives, etc.

Dressing:

  • Juice of 2 Large Lemons
  • 2 Tbs. Olive, Avocado, Almond, Walnut or Other Healthy Oil
  • 1/4 Cup Vegan Grated Parmesan Cheese
  • Blend of Seasonings to Taste:
    • Garlic Powder
    • Onion Powder
    • Garlic Salt
    • Pink Himalayan Sea Salt
    • Organic Dulse Flakes
    • Cayenne Pepper or Other Pepper

Directions

  1. Bake/Heat vegan chicken as indicated on package
  2. Prepare all salad ingredients and mix together in a large salad bowl
  3. Whisk all dressing ingredients together in a bowl
  4. Add dressing to the salad bowl and toss all ingredients together
  5. Either toss vegan chicken with salad or serve atop individual plates
  6. While serving on individual plates, add optional toppings as desired
