Ingredients
Salad:
- 16 Oz Romaine
- 1-2 Green Onion Stalks (Diced)
- 1/2 Cup Vegan Shredded Parmesan Cheese
- Prepared Vegan Chicken Strips or Diced Vegan Patties/Nuggets
- Can add any other diced vegetable, fresh nuts, or seeds as desired
- Optional: Toppings for individual plates could include Croutons, Tortilla Strips, extra Shredded Parmesan Cheese, Olives, etc.
Dressing:
- Juice of 2 Large Lemons
- 2 Tbs. Olive, Avocado, Almond, Walnut or Other Healthy Oil
- 1/4 Cup Vegan Grated Parmesan Cheese
- Blend of Seasonings to Taste:
- Garlic Powder
- Onion Powder
- Garlic Salt
- Pink Himalayan Sea Salt
- Organic Dulse Flakes
- Cayenne Pepper or Other Pepper
Directions
- Bake/Heat vegan chicken as indicated on package
- Prepare all salad ingredients and mix together in a large salad bowl
- Whisk all dressing ingredients together in a bowl
- Add dressing to the salad bowl and toss all ingredients together
- Either toss vegan chicken with salad or serve atop individual plates
- While serving on individual plates, add optional toppings as desired
