This recipe is compliments of our neighbor, Nana Char, who lovingly spent time showing me how to make it as I transcribed the recipe. One of her daughters came into town to help her as this was the first apple pie she would be making without her husband, best friend, and apple peeler by her side. Papa Tom meant so much to our family. My brothers and I loved reading Scripture to him and sliding down the snow hills he would make for us each winter. We will miss him, but grateful he is resting peacefully until our Saviour returns to take us all home.
Crust:
- 1-2 Boxes of Prepared Pie Crust (like Pillsbury dough)
- 1 Egg Replacer
- 1 Tablespoon Brown Sugar
- 1/4 Cup Butter (1 stick)
Filling:
- 6 Apples
- 2 Cups Cane Sugar
- 4 Heaping Tablespoons Cornstarch
- 2 Tablespoons Brown Sugar
- 1 Teaspoon Cinnamon
- 1/4 Teaspoon Nutmeg
- 1/4 Teaspoon All Spice
- 2 Tablespoons Lemon Juice
- 1/3 Cup Apple Juice
Directions:
- Preheat oven to 350°F
- Place dough in pie pan and coat dough with whipped egg and brown sugar inside and out.
- In a large bowl, combine apples, lemon juice, and apple juice.
- Combine sugar, cornstarch, and cinnamon and then spread over apple mixture, coating apples well.
- Pour mixture into a paper-lined pie pan.
- Cut up butter and spread over mixture.
- Take second pie crust, lay it on top of the mixture, and coat with egg and brown sugar mixture.
- Put it in oven and bake for 60 minutes.
- Let cool before slicing and enjoy!
