Here is an idea on how to turn stir-fry vegetables into an interesting soup. Please remember that these recipes make 8-10 servings for larger families or those desiring to minister to others by sharing El’s bounty. Feel free to reduce in half if making for an individual or small family.

Ingredients

  • 8 Cups Vegetable Broth
  • 10 Cups Water
  • 1 Large Bok Choy, chopped and washed
  • 1 Large Leek, chopped and washed
  • 16 oz. Frozen Broccoli
  • 1 Head Garlic, chopped or minced
  • 2 Cans Bamboo Shoots, drained and rinsed
  • 2 Cans Water Chestnuts, drained and rinsed
  • 2 Cans Baby Corn, drained and rinsed
  • 2 Cans Mushrooms or 1 lb. Fresh Mushrooms (optional)
  • 16 oz. Organic Frozen Edamame
  • 1/2 lb. Organic Ramen or other noodles, broken in smaller pieces
  • 1/4 Cup Organic Soy or Tamari Sauce
  • 1/4 Cup Liquid Aminos
  • Seasonings to Taste:
    • Fresh Ginger (1 in. cube, minced or grated)
    • Onion Powder
    • Garlic Salt
    • Cayenne Pepper or Siracha Sauce

Directions

  1. Bring broth and water to a simmer in a large stockpot over medium-high heat
  2. Add all vegetables, bring to a boil, and simmer for 10 minutes
  3. Add seasonings, stir, and continue to simmer another 10 minutes
  4. Add noodles, stir, and continue to simmer for 10 minutes or until vegetables are desired tenderness
